Pasta with chorizo is a recipe where the gastronomic cultures of the Mediterranean are mixed, where by choosing a good Italian pasta (the one you like the most) and a good Iberian chorizo , you can create a unique pasta with Iberian chorizo. For this you will need the following ingredients:

- Fried tomato sauce, if it is homemade much better.
- An onion.
- garlic to taste
- And a good extra virgin olive oil.
The first thing we will do is cut the Iberian chorizo into thick slices (1-2 centimeters) and then into cubes, the onion, also into cubes and, finally, the amount of garlic that you prefer, we cut it very small (we use a chopper of garlic which is much faster).
Once we have the ingredients cut, in a large non-stick frying pan, heat the extra virgin olive oil over medium heat, and when it is hot, add the onion and garlic.
As the onion and garlic brown, we add the Iberian chorizo that we had cut into cubes, and we move it from time to time to prevent it from burning.
When the sauce begins to take on the reddish color of the Iberian chorizo, we will add our tomato sauce. Here the detail of the tomato sauce is important, if it is well seasoned with salt and spices, when it is mixed with your sauce, you will already have all the flavor of the dish without the need to add salt or pepper.
Now, lower the heat to a minimum of your Iberian chorizo sauce with tomato, and start preparing the pasta, the one you like best, we choose some rigatoni, which we love.
When your pasta is cooked (leave it one minute less than what the package says) before straining it, reserve a little of the cooking water and mix your pasta with the Iberian chorizo sauce with tomato that you have prepared, and if you see that it remains a little honeyed, add a little of the cooking water that you had reserved.
