Don Juan, who founded the cheese factory in 1934, began working with the milk of his La Mancha sheep , creating his culinary art and transforming it into the cheeses we know today.
This artisan Manchego cheese made with pure Manchego sheep's milk is characterized by having been left to cure in caves covered with rosemary and butter, making it a unique Manchego cheese with an exceptional flavor and smell.
We recommend you consume it as a Manchego cheese tapa, only accompanied by a good Cueva sparkling wine, to be able to taste all its flavor.
